With 9,000 years of cultivation behind them, it is no wonder that there are a myriad of varieties in a multitude of colours available to the home gardener – all have their origins in wild species native to Central and South America.
Pimento is the Spanish word for “pepper”. The flesh is very thick, sweet and red to reddish-yellow at maturity. You’ve probably had pimentos in potato salad or stuffed in a green olive. They are juicy and aromatic and are often served in green or pasta salads, or served as appetizers. A very useful variety for stuffing and are superb for canning whole. May be grown in pots.
