The blocky fruits of this heirloom vegetable display three or four lobes that turn from glossy green to bright red when ripe. Eat them sliced raw as crispy snacks and salad fixings or cooked as a side dish. The large, hollow seed cavity can be stuffed with chopped meat, cheese and chopped onion for roasting to making delicious hot stuffed peppers.
