Parsnips produce roots with a sweet, nutty flavour and crisp texture. The flavour is best if timed to mature during cool weather. Roots are yellowish-white, shaped like a carrot, and may grow to 12in (30cm) long and 2in (5cm) across at the top. Use in stews and soups, steamed, sauteed in butter, or shredded raw in salads. A very heavy-yielding root crop.

Direct-sow seed several weeks before the last spring frost date as seedlings are hardy. Choose a sunny location and a deep, fertile, well drained soil. Ensure at least 2 inch spacing between seedlings by thinning out any that are crowded. Water regularly and keep site free of weeds.
