Leafy parsley is probably the most widely used garnish. In our long Canadian winters look no further than the root varieties. They are an easily kept and readily available source of that unique parsley flavour.

Though the leaves are used as a tasty garnish, Hamburg parsley is grown mainly for its flavourful, creamy white roots. When grown in well-prepared, deep soil free of coarse particles, the tapered roots reach 6in - 8in / 15cm - 20cm long. Serve cooked in soups and stews or grated uncooked then mixed in salads. Cold weather sweetens the flavour of the roots.

Since the roots do not like to be disturbed, direct-sow seed where plants are to grow several weeks before the last spring frost date. Choose a soil that is crumbly and free of weed roots and stones so the roots can grow long and straight. Also, they are ideal for growing in containers on a deck or patio providing they receive full sun and the soil has good drainage.
