Cress grows better in cooler weather and flourishes in a moist soil that is fertile and highly organic.

Peppery-tasting watercress is a semi-aquatic, creeping perennial whose leaves are popular in salads, sandwiches and as a garnish. Plants grow rapidly in running streams and wet places in the garden, but require some shade in warm inland areas. Plants can also be grown in pots of soil placed in a tub of water; change water weekly by running a hose in the tub. Plants grow 10in - 15in (25cm- 38cm).

Watercress is a hardy perennial evergreen, growing quickly from seed at any time of year to produce clover-like leaves. Start seed indoors six weeks before outdoor planting. When growing in water, be sure to anchor roots with stones or gravel so they do not float away. Choose a sunny location.
